It’s that time of the year again when the country is waiting eagerly to celebrate the festival of colours, Holi. Thandai is a delicious festive drink, hugely popular in northern India. It is usually made with milk, almonds, fennel seeds, pepper corn, rose petals, cardamom, khus seeds and sugar. Thandai is one beverage you can always experiment with, some people use nuts and dry fruits such as dates and pistachios along with some cream.

Since Holi, usually falls during the spring-summer transition there’s nothing better than a chilled glass of Thandai or Sardai to go with it. One can get thandai powders in market but the authentic taste lies in the freshly ground powder made at home. While there are number of flavours in thandai that you can get in the market, right from badaam to even chocolate but the classic kesar thandai has our heart.

And if you’re wondering the traditional drink might be tough to make at home, let us tell you it is not. Thandai can easily be prepared in a matter of few minutes with a few simple steps. We’ve got you covered with a quick and easy kesar thandai recipe by NDTV Food’s Youtube channel. In the recipe, nuts like blanched almonds, chopped cashews and pistachios along with spices like cinnamon powder, fennel seeds, cardamom, peppercorns and poppy seeds are ground with milk to make a paste. It is then added to a pan of milk along with saffron and sugar. And that’s about it, your chilled glass of thandai is ready to be relished, top it with saffron strands and nuts and serve along with rose petals.
